Chorizo & Red Pepper Soup
Winter is fast approaching which means it’s the perfect time of year for a nice hot bowl of soup🥣 and today I decided to make my favourite❤️ - Chorizo and Red pepper soup🌶!
Before I start explaining my ingredients and method I must admit that I cheated🤫 a little with this one, as I used a soup maker! But of course I will explain how it can be made without one too👍🏼
Ingredients
- 200g chorizo ring
- 2 sweet red peppers
- 1 white or red onion
- 400g chopped tomatoes
- 1 vegetable stock cube (450ml)
- 1 teaspoon paprika
- 1 teaspoon garlic purée
- 1 teaspoon chilli purée
Method
First, I chopped up the chorizo, peppers and onion into small pieces.
Next, I fried off the chorizo, peppers and onion until the veg and chorizo had softened.
Following this comes the easy part, I added the chorizo, veg and all of the other ingredients mentioned into the soup maker, put the lid on and pressed ‘start’ 🤣
20 minutes later I had the perfectly hot, thick, smooth chorizo and red pepper soup👌🏼
Of course not everyone will be as lucky me to have a soup maker but not to worry, all of the ingredients can be cooked off in a large saucepan and then liquidised in a blender for the same tasty results🙌🏼👌🏼
Review
The soup turned out perfect🤤 the consistency was just as I liked, a lovely flavour with a slight spicy kick! The recipe is also very healthy👌🏼 and affordable, serving four portions with the total cost of ingredients coming to only £5.18👏🏼👏🏼
